Roasted Nutty Candied Sweet Potatoes
This recipe mixes mostly healthy and a wee bit not so healthy (basically butter and sugar) ingredients but its all real food. I love when a side dish is dessert-like..because I am usually full really fast and its like I had dessert,even though its really healthy.
32 oz diced fresh sweet potatoes
1 cup coursely chopped walntus or pecans
1/4 c melted butter
1/4 c melted coconut oil (or any vegetable oil will do)
2/3 c granulated sugar (don't judge..this is my recipe)
Quantities of spices are going to vary by taste. This is my liking..
2 T cinnamon
1/2 tsp nutmeg
1/4 tsp all spice
2 pinches cardamom(smell cardamom before you use it,some people love it and some hate it, I LOVE it, and its healthy)
Preheat oven to 375°. Melt and mix coconut oil and butter in a bowl. Add sugar and spices and incorporate. Add nuts, stir well...add sweet potatoes, stir well.
Pour onto a baking pan. Bake for 25-30 minutes or until sweet potatoes are tender.

Note, you can use any spices you like...any oil, and any nuts. You can also use brown sugar, maple syrup, molasses, etc...go to town. Make it your own. That is what love of cooking is all about. Add the love and ingredients your family likes and no one else's cooking will compare.
