Pineapple Pulled Chicken ~Pressure Cooker Recipe

My Pineapple Pulled Pork is a huge hit in my house but its not always convenient to get an organic pork butt.  You can use boneless chicken thighs and make this in no time.  It is just as good.
This is great to have in your pressure cooker on keep warm for your football, birthday and holiday parties.

Pineapple Pulled Chicken (pressure cooker version)

Toss this all in the pressure cooker

3 lbs Boneless Chicken Thighs
1 C ketsup
1/3 C cider vinegar
1/2 C packed brown sugar (more or less, I am a junkie)
a handful of paprika
1 T pepper flakes
4 T worcestershire sauce
4 T drived minced garlic
salt
pepper
1 C pineapple juice or pineapple necter (goya)
1 Can crushed pineapple (you can use fresh and hit it in the food processor)
1/2 C molasses

Pressure Cook on on high for 25 minutes
Open the pressure cooker and pull chicken apart

Serve on a roll with coleslaw or eat it as is.

Now go put your feet up and have some tea....your family will think you cooked all day.


My favorite Pressure Cooker, at the time of writing this post, is the Instant Pot. Its affordable and has a stainless pot instead of non-stick crap..which is very important to my family.

I started about about a decade ago when my friend Deb Murray who was working for Wolfgang Puck sent me one of his models to try out, because I ran a Rice Cooker Group for him.  I immediately started a pressure cooker group and had 7000 active members.  We all shared recipes and learned so much together over the years.
I make a quick lasagna from raw noodles in no time, make mashed potatoes in it, in 8 minutes and they stay hot in there for everyone to come back for seconds..and hard boiled eggs in 6 mins that even eggs laid that day will slip out of the shell (and don't tell me your tricks to get eggs to peel..I have chickens, this is the only thing that works).  I will post these recipes coming up.  I have really been slacking.  My husband asked me last night, if something was on my blog because someone requested a recipe..I hadn't blogged yet.
Sorry..I am gonna try to be better about blogging them.
Please take my recipes and run with them.  You can make buffalo chicken barbq in this..which is like a buffalo chicken wing on a bun...just subbing out and in ingredients in this recipe.  Use your imagination....that is when the best recipes are created!!
