One Pot Taco Sketti



I will keep this short and sweet. I use organic when I can. You can or don't have to.
Pics below. Its a nice change up to traditional spaghetti.
Serve with margaritas, with or without alcohol.

One Pot Taco Sketti

I doubled this so that we would have leftovers. It should serve four but everyone will want seconds so you might as well double it also. ;)

1 lb ground beef
½ onion
5 cloves garlic
½ c sweet peppers
1 hot pepper

1 can tomatoes
1 T tomato paste
3 C water
8 oz uncooked spaghetti
¼ C taco seasoning

½ c shredded cheddar cheese

optional:
lettuce
onion
tomato
fritos
taco sauce

Start browning the ground beef in the RockCrock Dutch Oven on medium to medium high heat. I like to use the Bamboo Spatula to cook on the stove top a lot because you can leave it in the cooking vessel and it won't melt or get hot.

Meanwhile in the Manual Food Processor, chop the onion, garlic and peppers to desired consistency. This is a personal preference, fine or course, whatever you like. Add to ground beef and continue to brown until cooked through.

Add the next 5 ingredients and bring to a boil. Cover and turn down to simmer and simmer about 15 minutes, stirring occasionally.

When pasta is finished, turn off burner, open lid, add cheese and close lid another 3-5 mins until cheese melts. Stir and serve.

My family loved this.

This was excellent served over a bed of lettuce with fritos on top, like an open faced taco salad, drizzled with taco sauce

Tip: Freeze the leftover tomato paste.  You won't use the whole can and it freezes nice, you can cut off as you need it and refreeze again.  No wasted tomato paste.  It freezes nice in sandwich baggie rolled up and stashed on the freezer door.
