My Pineapple Pulled Pork is a huge hit in my house but its not always convenient to get an organic pork butt. You can use boneless chicken thighs and make this in no time. It is just as good.
This is great to have in your pressure cooker on keep warm for your football, birthday and holiday parties.
Pineapple Pulled Chicken (pressure cooker version)
Toss this all in the pressure cooker
3 lbs Boneless Chicken Thighs
1 C ketsup
1/3 C cider vinegar
1/2 C packed brown sugar (more or less, I am a junkie)
a handful of paprika
1 T pepper flakes
4 T worcestershire sauce
4 T drived minced garlic
salt
pepper
1 C pineapple juice or pineapple necter (goya)
1 Can crushed pineapple (you can use fresh and hit it in the food processor)
1/2 C molasses
Pressure Cook on on high for 25 minutes
Open the pressure cooker and pull chicken apart
Serve on a roll with coleslaw or eat it as is.
Now go put your feet up and have some tea....your family will think you cooked all day.
My favorite Pressure Cooker, at the time of writing this post, is the Instant Pot. Its affordable and has a stainless pot instead of non-stick crap..which is very important to my family.
I started about about a decade ago when my friend Deb Murray who was working for Wolfgang Puck sent me one of his models to try out, because I ran a Rice Cooker Group for him. I immediately started a pressure cooker group and had 7000 active members. We all shared recipes and learned so much together over the years.
I make a quick lasagna from raw noodles in no time, make mashed potatoes in it, in 8 minutes and they stay hot in there for everyone to come back for seconds..and hard boiled eggs in 6 mins that even eggs laid that day will slip out of the shell (and don't tell me your tricks to get eggs to peel..I have chickens, this is the only thing that works). I will post these recipes coming up. I have really been slacking. My husband asked me last night, if something was on my blog because someone requested a recipe..I hadn't blogged yet.
Sorry..I am gonna try to be better about blogging them.
Please take my recipes and run with them. You can make buffalo chicken barbq in this..which is like a buffalo chicken wing on a bun...just subbing out and in ingredients in this recipe. Use your imagination....that is when the best recipes are created!!

Bujo~ Bullet Journaling: How to get started
Bullet Journaling aka BuJo
For anyone interested in bullet journaling, here is a tutorial for beginners. You can get way more (or less) detailed than this, but its a starter for anyone who never heard of it.
Check out you tube and pinterest for ideas and lay outs.
What I like about bullet journaling is the commercial planners that I have purchased in the past, don't really cater to the subjects I would use and there are pages in commercials planners I never use. I have bought some really cool planners but still don't use 1/4 to 1/2 of the pages or scribble our their heading to make use of it.
You can make it as detailed as you like. If you enjoy it, and take your time, you can consider it a sort of meditation.
If you don't have time, you can buy one. There are many for sale made by some very creative people. Here is an inexpensive one and a great gift idea for the kids.
Unless your kid is creative (all kids are, aren't they). In this case, they have how to books.

Baked Crab Poppers (or salmon or tuna or even chicken)

This recipe originally uses crab meat, but for a poor man's version use tuna or salmon packets or even chicken.
Baked Crab Poppers (or
salmon or tuna or even chicken)
Recipe makes 32 poppers
Prep:20 Min
Cook:10 Min
Method:Bake
1 c unseasoned Panko bread
crumbs
1 c corn, canned
3 small mini red bell pepper
1 jalapeno pepper chopped (optional)
1 jalapeno pepper chopped (optional)
1/4 c green onion stems,
finely chopped
16 oz jumbo lump crabmeat,
drained (tuna, salmon and chicken work great too)
3/4 c Duke's mayonnaise
1 egg, lightly beaten
1 tsp coarsely ground black
pepper
1/2 tsp salt
1 lemon
1/8 tsp cayenne pepper
Heat oven to 425 degrees.
Spray cups of mini-muffin pan with non-stick cooking spray. Sprinkle cups with
1/2 cup of the bread crumbs, gently tapping and rotating to coat.
Finely chop bell pepper using the food chopper or manual food processor. Blot mixture dry with paper towel. Finely chop onion tops setting aside 1
teaspoon for garnish.
Combine corn, bell pepper,
remaining onions, crabmeat (or chicken, salmon or tuna), 1/2 of the mayonnaise, egg, black pepper, and salt in the batter bowl.
Mix well but gently to not break up the crabmeat too much. Sprinkle lightly
with remaining Panko crumbs.
Divide mixture evenly among
cups using the small or medium scoop. Bake 10 minutes or until golden brown. Remove pan from oven. Cool
in pan 2 minutes and then remove from pan to stackable cooling rack.
Meanwhile juice lemon for
sauce using lemon juicer. Combine juice, cayenne pepper, and remaining mayonnaise and mix well.
Brush tops of crab cakes with sauce using chef's basting brush and top with reserved finely chopped onion
tops.

One Pot Taco Sketti
I will keep this short and sweet. I use organic when I can. You can or don't have to.
Pics below. Its a nice change up to traditional spaghetti.
Serve with margaritas, with or without alcohol.
One Pot Taco Sketti
I doubled this so that we would have leftovers. It should serve four but everyone will want seconds so you might as well double it also. ;)
1 lb ground beef
½ onion
5 cloves garlic
½ c sweet peppers
1 hot pepper
1 can tomatoes
1 T tomato paste
3 C water
8 oz uncooked spaghetti
¼ C taco seasoning
½ c shredded cheddar cheese
optional:
lettuce
onion
tomato
fritos
taco sauce
Start browning the ground beef in the RockCrock Dutch Oven on medium to medium high heat. I like to use the Bamboo Spatula to cook on the stove top a lot because you can leave it in the cooking vessel and it won't melt or get hot.
Meanwhile in the Manual Food Processor, chop the onion, garlic and peppers to desired consistency. This is a personal preference, fine or course, whatever you like. Add to ground beef and continue to brown until cooked through.
Add the next 5 ingredients and bring to a boil. Cover and turn down to simmer and simmer about 15 minutes, stirring occasionally.
When pasta is finished, turn off burner, open lid, add cheese and close lid another 3-5 mins until cheese melts. Stir and serve.
My family loved this.
This was excellent served over a bed of lettuce with fritos on top, like an open faced taco salad, drizzled with taco sauce
Tip: Freeze the leftover tomato paste. You won't use the whole can and it freezes nice, you can cut off as you need it and refreeze again. No wasted tomato paste. It freezes nice in sandwich baggie rolled up and stashed on the freezer door.

Herbal Brown Sugar Scrub Cube (so easy and convenient)
These little cubes are great because you are not digging your wet hands into a container in the shower to scrub.
You can sub out many herbs to make your favorite herbal sugar scrub.
Herbal Brown Sugar Scrub Cubes
2 Tbsp Cocoa butter
1½ Tbsp Coconut oil
1 tsp of your fav herb, dried (chamomile, rosemary, lavendar, rose, mint etc, or even coffee grounds or green tea)
½ Tbsp raw honey
¼ C brown sugar
Place a glass measuring cup or mason jar into a saucepan with water (makeshift double boiler). Heat on low heat and add cocoa butter, coconut oil and herbs until melted. Add honey and brown sugar. Pour into ice cube trays and freeze until solid.
Remove from mold. Store in a ziplock bag in the fridge or freezer until ready to use.
Use one cube in the shower to scrub away.
You can add some salt in place of the sugar if you want a salt scrub. Salt is healthy for the skin but can be drying so go easy.
These trays are excellent for making these. You can pop them out when finished and keep them in a ziplock bag in the freezer for grabbing before your shower. They make it easy to remove the cubes.

Peppermint and coffee are great for circulation!
Go ahead and use essential oils when your herbs aren't in season or freeze a bunch to get you through winter.
