Instant Pot, Pressure Cooker, Quick Cooker..they are all the same thing.</div>
This blog post is a long time coming! Just get a 6-inch springform pan (Wilton makes one and you can use a coupon at Michaels), or use a pressure cooker safe casserole dish that fits your pressure cooker.<br />
I have made this in my Wolfgang Puck pressure cooker, my instant pot, and my Pampered Chef Quick Cooker. The Pampered Chef has a nice grey stoneware casserole that fits the quick cooker. I stopped selling Pampered Chef after years of selling but I still love the products. I did not use no boil noodles, just basic dry lasagna noodles.<br />

Add a layer of ricotta and couple of spoonfuls of pasta sauce.<br /><br />Break down ground sausage into small pieces and add a layer. Add your mushrooms or spinach, etc. Top with shredded cheeses and sliced fresh mushrooms.<br /><br />Top with lasagna noodles (broken to fit) and begin again, about 3 layers total depending on the depth of your pan. Top with sauce, mozzarella, and parmesan cheese.<br /><br />Cover with aluminum foil. Place on trivet in IP with 1.5 cups water. Cook 20 mins on high pressure. Let the pressure come down on its own for 20 minutes'.<br /><br />Let sit 10 mins before removing sides of pan and serving.</span></span><br />

Toss this all in the pressure cooker<br />
<br />
3 lbs Boneless Chicken Thighs<br />
1 C ketsup<br />
1/3 C cider vinegar<br />
1/2 C packed brown sugar (more or less, I am a junkie)<br />
a handful of paprika<br />
1 T pepper flakes<br />
4 T worcestershire sauce<br />
4 T drived minced garlic<br />
salt<br />
pepper<br />
1 C pineapple juice or pineapple necter (goya)<br />
1 Can crushed pineapple (you can use fresh and hit it in the food processor)<br />
1/2 C molasses<br />
<br />
Pressure Cook on on high for 25 minutes<br />
Open the pressure cooker and pull chicken apart<br />
<br />
Serve on a roll with coleslaw or eat it as is.<br />
<br />
Now go put your feet up and have some tea....your family will think you cooked all day.<br />

My favorite Pressure Cooker, at the time of writing this post, is the <a href="https://www.amazon.com/gp/product/B00FLYWNYQ?ie=UTF8&tag=margarit04-20&camp=1789&linkCode=xm2&creativeASIN=B00FLYWNYQ">Instant Pot</a>. Its affordable and has a stainless pot instead of non-stick crap..which is very important to my family.<br />

I started about about a decade ago when my friend Deb Murray who was working for Wolfgang Puck sent me one of his models to try out, because I ran a Rice Cooker Group for him. I immediately started a pressure cooker group and had 7000 active members. We all shared recipes and learned so much together over the years.<br />
I make a quick lasagna from raw noodles in no time, make mashed potatoes in it, in 8 minutes and they stay hot in there for everyone to come back for seconds..and hard boiled eggs in 6 mins that even eggs laid that day will slip out of the shell (and don't tell me your tricks to get eggs to peel..I have chickens, this is the only thing that works). I will post these recipes coming up. I have really been slacking. My husband asked me last night, if something was on my blog because someone requested a recipe..I hadn't blogged yet.<br />
Sorry..I am gonna try to be better about blogging them.<br />
Please take my recipes and run with them. You can make buffalo chicken barbq in this..which is like a buffalo chicken wing on a bun...just subbing out and in ingredients in this recipe. Use your imagination....that is when the best recipes are created!! <br />

One Pot Taco Sketti<br />

I doubled this so that we would have leftovers. It should serve four but everyone will want seconds so you might as well double it also. ;)<br />
<br />
1 lb ground beef<br />
½ onion<br />
5 cloves garlic<br />
½ c sweet peppers<br />
1 hot pepper<br />
<br />
1 can tomatoes<br />
1 T tomato paste<br />
3 C water<br />
8 oz uncooked spaghetti<br />
¼ C taco seasoning<br />
<br />
½ c shredded cheddar cheese<br />
<br />
optional:<br />
lettuce<br />
onion<br />
tomato<br />
fritos<br />
taco sauce<br />

Start browning the ground beef in the <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Cookware/Cookware/Rockcrok+Dutch+Oven/3140">RockCrock Dutch Oven</a> on medium to medium high heat. I like to use the <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Cookware/Cookware+Utensils/Bamboo+Spatula+Set/2042">Bamboo Spatula</a> to cook on the stove top a lot because you can leave it in the cooking vessel and it won't melt or get hot.<br />
<br />
Meanwhile in the <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Cook%27s+Tools/Mandolines%2C+Slicers+%26+Choppers/Manual+Food+Processor/2593">Manual Food Processor</a>, chop the onion, garlic and peppers to desired consistency. This is a personal preference, fine or course, whatever you like. Add to ground beef and continue to brown until cooked through.<br />
<br />
Add the next 5 ingredients and bring to a boil. Cover and turn down to simmer and simmer about 15 minutes, stirring occasionally.<br />
<br />
When pasta is finished, turn off burner, open lid, add cheese and close lid another 3-5 mins until cheese melts. Stir and serve.<br />

This was excellent served over a bed of lettuce with fritos on top, like an open faced taco salad, drizzled with taco sauce<br />

Tip: Freeze the leftover tomato paste. You won't use the whole can and it freezes nice, you can cut off as you need it and refreeze again. No wasted tomato paste. It freezes nice in sandwich baggie rolled up and stashed on the freezer door.<br />

Herbal Brown Sugar Scrub Cubes<br />

2 Tbsp Cocoa butter<br />
1½ Tbsp Coconut oil<br />
1 tsp of your fav herb, dried (chamomile, rosemary, lavendar, rose, mint etc, or even coffee grounds or green tea)<br />
½ Tbsp raw honey<br />
¼ C brown sugar<br />

Place a glass measuring cup or mason jar into a saucepan with water (makeshift double boiler). Heat on low heat and add cocoa butter, coconut oil and herbs until melted. Add honey and brown sugar. Pour into <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Cook%27s+Tools/Herb+%26+Garlic/Herb+Freezing+Tray+Set/1216">ice cube trays</a> and freeze until solid.<br />
Remove from mold. Store in a ziplock bag in the fridge or freezer until ready to use.<br />
Use one cube in the shower to scrub away. <br />
You can add some salt in place of the sugar if you want a salt scrub. Salt is healthy for the skin but can be drying so go easy.<br />
<br />
These<a href="https://www.pamperedchef.com/pws/shannondillman/shop/Cook%27s+Tools/Herb+%26+Garlic/Herb+Freezing+Tray+Set/1216"> trays</a> are excellent for making these. When he gets a patient complaining of arthritis, He tells them to drink water. He recommends 4 quarts a day. You should <u>at least</u> be drinking half of your body weight in ounces of water. So if you are 200 pounds, 100 ounces of water!<br />
I drink that but am hard on my body with working on warehouse floors and exercising, also having been a gymnast in my younger years, and I had a car accident where I was hit head on, my joints are shot! I am going with his 4 quarts theory and it has helped. I don't believe in masking ailments with pills. I don't take pills. If I had to, to save my life, I would probably break down and take them, but for pain and suffering, I have always looked for alternatives.<br />

Another of the many ailments caused by not getting enough water is wrinkles. Your organs will take it from your skin too. He says we are born about 80% water and whereas older people are less than 50%. Why is this?<br />

But due to pesticides the neighbors may be using, we filter it as best we can.<br />

<b>1 large onion, diced</b><br />
<b>1 large carrot, diced</b><br />

<b>a sliver or two of fresh fennel if you like it. </b><br />

<b>28 ounces chicken or veggie broth (I use homemade, frozen from past pressure cooker meals)</b><br />

<b>3 lbs tomatoes, diced (seeds removed)</b><br />
<b>OR 1-28 oz can stewed w juice and 1- 28 oz can diced drained</b><br />
<b><br /></b>
<b>T tomato paste</b><br />
<b>3 T dried basil</b><br />
<b>A pinch cinnamon (optional, its something that I always add to tomatoes. </b><br />
<b>1/2 tsp salt</b><br />
<b><br /></b>
<b>1/2 tsp fresh cracked pepper</b><br />
<b>1/2 C shredded parmesan cheese</b><br />
<b>1 C half and half or whole milk (or more, to taste) </b><br />

In the pressure cooker, saute the onion, celery, and carrot (and fennel if using it) in the butter until tender. Add broth, tomatoes, tomato paste, basil, cinnamon, salt and pepper<br />
<br />
Pressure cook on high for 5 minutes, then let pressure come down for 5 minutes and release the pressure. <br />
When the valve drops, remove lid and Put it in the blender (careful of the steam, its hot), add parmesan cheese, fresh cracked pepper and half and half.<br />
<br />
This could only be better by putting a slice of crusty bread on top, sprinkling cheese on it and broiling.<br />

I can't stress enough how versatile this dough recipe is. It's probably one of the best cookbook investments I ever made. I have the old version, that I bought when it first came out back in 2007 and since have also aquried a few of their books.<br />

I bought the revised version and it as worth buying again. Who knew they could improve the first book. This has what the first book had in it, and so much more, including information on freezing the dough, making bagels and soft pretzels with it, and so much more! <br />

I still make it in the <a href="http://www.amazon.com/gp/product/B000R8JOUC?ie=UTF8&camp=1789&creativeASIN=B000R8JOUC&linkCode=xm2&tag=margarit04-20">big commercial food container</a> but now I throw it into a baggie in the fridge and use a <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Storage+%26+Organization/Food+Storage/Twixit%21+Clip+Set/2651">twix it clip</a> that allows some air out but not in. It takes up a lot less of the precious room in my refrigerator.<br />
I also don't worry about using bread flour as much. Sometimes I use it, but most times I just use all purpose flour.<br />

Cloak the dough with flour and grab a wad and put it onto a flat stone, freehand, or in a bread stone (sprinkle a little corn meal on the stone to prevent sticking...especially if you are rolling it out to make stromboli or pizza, and bake at 400 for about an hour, the time will depend on the size. They say to let it rise first, but we have just bake it as is and it works. If you have the time, let it rise 30 mins before baking. I let it rise if I am making cinnamon raisin bread. </span><br />

That is up to you. You do not need to knead it, but you may want it incorporated and not just swirled in. Put it into an oiled <a href="https://www.pamperedchef.com/pws/shannondillman/shop/Bakeware/Stoneware/Stoneware+Loaf+Pan/1417">bread stone.</a> </span><br />
If you are using the dough fresh risen, not yet refrigerated, you let it rise for 45 minutes.<br />
If the dough was refrigerated, you need to let it rise for 1 hour and 45 minutes. <br />

Then brush it with a beaten egg and if you want, you can sprinkle some sugar on the top.<br />
<br />
Bake the cinnamon raisin bread at 375° for 35-40 minutes.<br />

Anyone who has been here has seen my cookbook collection....or should I say addiction...I just got a new cookbook...its not my normal type of cookbook but after making the mug cakes and mac and cheese, I wanted to check this one out. Its actually a good book.<br />

Its a great book for those with older kids, pre-teens and teens, and lazy cooks too. And those who live alone but don't want to mess up the whole kitchen to get a hot meal...You can get a pretty descent "home cooked" meal in a few minutes. Yes, I didn't say it was healthy but I have to say its healthier than fast food.<br />

A few meals in it that caught my eye are, Salmon and Dill Orzo, Primavera Quinoa Mug, Southern Sausage and Grits (yes, in a few mins), jalapeno popper dip, french toast, cinnamon roll mug, peanut butter cookie, Irish Brown Bread..I could go on for days....most of these things are made from scratch.<br />
If you want to read the reviews on this book on Amazon, its rated pretty nicely.<br />

I just made the Salmon and Dill Orzo (using tiny stars pasta because I don't have orzo in my pantry), and the Cinnamon Roll Mug.</div>

Preheat oven to 350°<br />
if not using a bread baking stone, grease bread pan<br />
<br />
In a medium bowl:<br />
1 C flour<br />
1/2 C unsweetened cocoa powder<br />
1 tsp baking soda<br />
1/4 tsp baking powder<br />
1/4 tsp salt<br />
1/2 tsp cinnamon<br />
1/4 tsp all spice<br />
Pinch Cardamom<br />
Pinch Cloves<br />
<br />
Mix with a wire whisk.<br />
<br />
In mixing bowl:<br />
1/2 C white sugar<br />
1/2 C brown sugar<br />
2 eggs<br />
1 tsp vanilla extract<br />
<br />
Mix well (about 2 minutes<br />
fold in<br />
1 1/2 C shredded zucchini (use medium grater or shredder)<br />
<br />
Add in dry ingredients and beat until just combined.<br />
<br />
Add in<br />
3/4 C chocolate chips<br />
<br />
Bake at 350°for 55-65 minutes until toothpick comes out clean<br />
<br />
Place on wire rack for about 10 minutes.<br />
Turn out onto wire rack and cool, or cut right in the bread pan and serve.<br />
